USDA Choice Short Ribs (boneless)
A crowd favourite among the less mainstream cuts of meat. The USDA Choice Beef Short Rib is a quality cut that is juicy, flavourful with a unique beefy taste. The cut originates from the rib areas of the carcass, towards the chuck and the plate primal cuts. The Short Rib tends to have a lot of flavour, it is arguabley one of the more flavourful steaks in the steer, but can be fatty and tough. When cooking a whole rack of short ribs we recommend cooking the short rib, low and slow, indirect heat or smoked to retain as much moisture as possible.
Cattlelog's Short Ribs come in 3 different cuting styles
- Cubes - short rib is portioned into smaller cubes (~5cm x 5cm)
- Galbi - a cross sectional cut of approx 1 - 1.5 cm thickness ideal for korean BBQ, marinade and grill to done-ness
- Whole - approx 3 ribs, cook low and low until fat and meat falls off the bone.
